Vegan Biryani

Ingredients

Serves 6 people
  • Basmati rice, uncooked – 180g
  • Reduced-salt vegetable stock powder – 2 tsp (4g)
  • Ground turmeric – 0.5 tsp (1g)
  • Olive oil – 1.5 tbs (30ml)
  • Firm tofu, cut into small cubes – 260g
  • Brown onion, thinly sliced – 125g (1 whole)
  • Garlic, minced – 1 tsp (5g)
  • Ginger, crushed/minced – 1 tsp (5g)
  • Garam masala – 1 tsp (2g)
  • Ground coriander – 0.5 tsp (1g)
  • Ground cumin – 0.5 tsp (1g)
  • Ground cinnamon – 0.25 tsp (0.5g)
  • Frozen peas, carrots and cauliflower mix – 250g
  • Frozen green beans – 100g
  • Canned chickpeas – (undrained weight, 1 can = 400g) – 225g drained weight (1 can)
  • Dried raisins (pre-soak and/or cut lengthways in half to reduce risk of choking) – 90g

Method
  1. Cook rice according to packet instructions. Add stock powder and turmeric to rice water to absorb whilst cooking.
  2. In a large, deep frying pan or wok heat half the oil on medium-high heat. Cook tofu, in batches, stirring occasionally, for 4-5 minutes, until golden brown. Remove from pan and set aside.
  3. In the same pan, add remaining oil and cook onion, stirring occasionally for 10-15 minutes, until caramelised.
  4. Add garlic, ginger and spices to pan and cook, stirring, for 1 minute or until fragrant.
  5. Add frozen vegetables and cook, stirring, for 5-6 minutes or until vegetables are tender.
  6. Add rice, chickpeas and reserved tofu to the pan and stir to combine.
  7. Divide biryani into bowls and sprinkle with raisins to serve.
