Malaysian fish curry

Ingredients

Serves 6 people
  • Brown rice – 180g
  • Long fresh red chili, deseeded, roughly chopped (optional) – 5g (0.25 whole)
  • Garlic clove, roughly chopped – 3g (1 clove)
  • Canola oil – 1 tbs
  • Lemongrass paste – 0.5 tsp (2.5g)
  • Curry powder (no added salt) – 0.5 tsp (1g)
  • Ground turmeric – 0.5 tsp (1g)
  • Sweet potato, cut into 1cm pieces – 180g (1 whole)
  • Reduced – salt vegetable stock powder – 2 tsp (4g)
  • Boiling water – 0.5 cup (125ml)
  • Firm white fish fillets, cut into 3cm pieces – 360g
  • Green beans, trimmed, halved – 90g
  • Zucchini, halved lengthways, thinly sliced – 180g (1.5 whole)
  • Light coconut milk – 400ml

Method
  1. Cook rice according to packet instructions.
  2. In a small food processor or blender, add chilli, garlic, oil, lemongrass, curry powder and turmeric and blend until a paste forms.
  3. Heat a large non-stick wok on medium-high heat. Add the curry paste and cook for 1 minute or until fragrant.
  4. Add sweet potato, stock and water. Simmer, stirring occasionally, for 10 minutes or until the sweet potato is tender.
  5. Reduce heat to medium and add fish, beans, zucchini and coconut milk. Simmer, stirring occasionally, for 10-15 minutes, until the fish is cooked through and the vegetables are tender.
  6. Serve curry with rice.
