Cauliflower fried rice

Ingredients

Serves 4 people
  • Cauliflower, diced – 1 head
  • Carrot, diced – 1
  • Mixed peas & corn – 1 1/2 cups
  • Shallots, diced – 6
  • Ginger, peeled and grated – 1 knob
  • Eggs – 2
  • Cashews, roughly chopped – 1/4 cup
  • Protein of your choice*, diced – 100g
  • Tamari – 2 tablespoons
  • Olive oil

*we recommend chicken, tofu or prawns.


Method
  1. Pulse cauliflower in a food processor until it resembles rice grains (or chop finely with a knife).
  2. Heat a little olive oil in a pan, add carrot & protein of your choice and cook until protein is browned before removing from pan.
  3. Add cauliflower, shallots & ginger to the same pan and cook until cauliflower has softened.
  4. Return protein, carrot, and remaining ingredients (except eggs) and cook for 5min until warmed through.
  5. Meanwhile, whisk eggs and cook in a medium frying pan with a little olive oil until just cooked through. Chop in bite size pieces before mixing through the cauliflower mix.
  6. Serve immediately.
